Directions
- Clean the brussel sprouts and then place in food processor to shred. You should usually split up the amount of sprouts you place in the processor into shifts for a more consistent shredded texture.
- Bring a sauté pan to medium high heat, add your raw meat and break up into a ground meat texture. Add the diced peppers and onions into the pan and cook together until meat is cooked through, occasionally stirring.
- Once the meat has cooked through, add the brussel sprouts into the pan as well as the olive oil, adobo seasoning, chipotle chilies, and adobo sauce. Stir to combine. You may need to add more oil to coat everything. You do not want it to be dry. I usually add a bit more because I like the texture of the sprouts to be very sautéed but do this to your preference! Sauté and stir for 5-7 minutes. Add any salt and pepper to taste.
- Time to serve as the star of the show on its own, as a side, or as my preferred choice over a delicious colorful salad! Goes beautifully with a vinaigrette salad dressing!
