- Preheat your over to 400 degrees Fahrenheit.
- Bring a large enough pot to cook the pasta according to its instructions to a boil. However, you will want to strain the pasta a minute before reaching al denote. Salt the water and cook the pasta. Before straining, reserve the amount of pasta water in the instructions. You will likely complete this process before it is time to add the pasta which is okay. Keep it safely aside in the strainer until ready to incorporate.
- Toss your cherry tomato slices in enough oil to coat them, then eyeballing it you will season them with dried basil, salt a pepper. Don’t go too crazy, there will be plenty of seasoning in the other steps.
- Heat a medium to large skillet over medium high heat with the oil in it. Add the diced onion. Proceed to cook and stir until they become soft and translucent. Then add the minced garlic along with the dried Italian seasoning, red pepper flakes, and dried basil seasoning if you are not using fresh in at this point (if using fresh basil wait until instructed). Stir constantly for 35 seconds. Then add the tomato paste and stir this as well until it has deepened to a vibrant darker color (roughly 1-2 minutes).
- Add 1/2 of the wine in now. While stirring occasionally, let this deglaze your pan. Once most of the liquid has cooked off, add all of the vegetables except the peas. Continue to stir occasionally until they have all cooked to a softer texture (roughly 7 minutes). Then add the rest of your wine as well as the peas for an additional 2 minutes.
- Turn the head down and add the heavy cream. Stir gently to incorporate. Then add your lemon juice and 1 cup of the reserved pasta water. You may add more of this until it has reached a desired consistency if 1 cup is not enough.
- Add your cooked pasta into the pan with all of the other ingredients( if you are using fresh basil add the amount directed in the ingredients in now). Carefully incorporate everything together. And cook for another minute.
- Remove from heat. Stir in the Parmesan cheese. Salt and pepper to taste. Serve and garnish with additional Parmesan cheese and chopped fresh basil. Enjoy!
