- Preheat oven to 400 degrees Fahrenheit. After you have cubbed up all of the sweet potatoes and diced the poblano peppers, place them in a large enough mixing bowl and drizzle them with olive oil generously. Add all of the seasoning listed in the “sweet potato filler” ingredients list above and toss everything together. Make sure the sweet potato and poblano peppers are thoroughly coated. Spread everything out on a parchment lined baking sheet evenly. Place in oven and bake them for around 35-40 minutes. Test with a fork to see if they are soft before removing them from the oven.
- While the sweet potato and poblanos are cooking, you will create the bean topper and zesty lime crema. Grab a large enough bowl and add the cooked or canned black beans, shredded purple cabbage, cumin, garlic powder, lime juice, and jalapeño slices (if you are using them). Toss everything together and season with salt.
- You can either make your zesty lime crema in a small bowl or salad dressing bottle if you have one (the bottle is nice for pouring it over the tacos). Mix the sour cream, mayo, lime juice, and season with salt. Keep in fridge until the sweet potato and peppers are done.
- Once the sweet potatoes are soft when stabbed with fork, remove from the oven while keeping it still on (for the crunchy part!) Grab your favorite store bought flour or homemade flour tortillas. (We personally use fajita size because we wolf these down!!) Lay the tortillas flat on a cool baking sheet pan, above the middle of the tortilla place enough of the sweet potato and poblano filling in a straight line as you would normally do when building any taco. Then bring the bottom of the tortilla up (the shorter side where the filling is more towards the edge of it) to where it is mostly covering the filling you just added but a little of it is showing. Sprinkle the cheese you are using along the top of the sweet potato mixture. Once the tacos have been assembled as so, place back in the oven and bake until they have become a golden brown, roughly 5-10 minutes but make sure to keep a very close eye on them as they can quickly burn.
- Once the tacos have become golden brown (aka crunch!) take them out of the oven, safely remove them with a spatula and assort them on your plates. Once they have cooled enough to safely handle (but not cooled off completely!) gently peal back the top of the taco and insert the black bean topper. Then drizzle the zesty lime crema over it. And with a delectable crunch, enjoy!!
