Serve this flavorful Cauliflower rice alone as a side or use it as a salad topper atop of your favorite garden salad!

  1. Pulse your 1 inch pieces of cauliflower in your food processor. Do this until they have reached a size that is slightly larger than grains of rice. Make sure you do not over process the cauliflower. Depending on the size of your processor you will most likely need a bowl to empty rice out as you process the cauliflower in shifts.
  2. Grab a large enough pot or pan and heat your oil on medium high heat. Add your onion, stir often until it is starting to brown and soften. Add your minced garlic, coriander, tomato paste, and adobe chilies with adobo sauce. Cook and stir contents for roughly a minute. You will notice the fragrance.
  3. Add your riced cauliflower as well as 1 tsp of salt and pepper. Stir to combine ingredients thoroughly and continue to stir often while this cooks for 5 minutes.
  4. Stir in peas for about 2 minutes. Add your lime juice and season with more salt and pepper if you prefer-not necessary.
