This mouth-watering Indian dish is both rich and flavorful and features tender pieces of chicken, marinated in a blend of yogurt and spices, including cumin, coriander, turmeric, and garam masala. It’s then simmered in a creamy tomato-based sauce, which is infused with aromatic spices like ginger, and garlic to create a luxurious blend of rich tomatoes and smooth cream. Once simmered, the vibrant orange hue of the sauce is as inviting and mouth watering as its aroma! Served with steaming basmati rice and warm naan bread, Chicken Tikka Masala is a comforting and satisfying meal that truly is a delight for your taste buds!

- Grab a large enough bowl to combine all of your marinade ingredients in minus the chicken. Once the marinade ingredients are combined, add the bite sized chicken pieces into the mixture. I use a glove as this process is quite messy, make sure you really kneed the chicken well until all of the pieces are covered and submerged in the marinade. I prefer to keep the chicken marinading in the fridge 24-48 hours. If you don’t have this time, at least marinade 2-3 hours.
- Grab a large enough sauté pan or a pot to contain all of the ingredients in this recipe at the end. Heat the oil at medium high, once it is hot add the chicken. I break these up into groups to make sure they cook appropriately. Cook the pieces 3 minutes on each side. It is okay if the chicken is not cooked all the way through, it will continue to cook in the masala sauce later. Remove the chicken pieces to a large enough plate for now.
- Using the same pan, melt down your butter and then add the onion. Sauté until the onion becomes soft and translucent. Make sure you continue to stir them. Once they have cooked, add in the ginger and garlic for 45 seconds while stirring. Then add the coriander, cumin, garam masala, turmeric, chili powders (or substitutes) and stir for 25 seconds until fragrant.
- Add the canned tomato sauce and salt, simmer everything together for 20 minutes while stirring regularly. You will notice the color of the sauce deepen and the consistency thicken. Now you will want to add your sugar as well as the heavy cream making sure you stir everything well to combine.
- Add the reserved chicken along with any bits and juices on the plate into the pan or pot. Simmer for an extra 10 minutes or until the chicken is cooked through. If you want to thin out the sauce to your preferred consistency, you may add the water now. Serve with your favorite rice (mine is as always basmati!) with a side of naan bread, and garnish the way you like! ENJOY!
